I am a NC native and had never heard of them until my husband and I were at the State Farmers market in Raleigh. One of the stands had them for sale and the lady told me how good they were. I just cooked them for New Years. Oh my goodness! The absolute best. Like you, I had to add some ham, in this case it was country ham. As some of my relatives might say, yellow eyed peas are "some mighty good eatin" Thank you again for this post.
